the deceptively fancy dessert

I have a few desserts that I keep in my back pocket for unexpected gatherings: brownies, banana chip bars, and for larger groups, sugar cookie bars. Everyone needs some quick, easy, and delicious treats to turn to in a pinch.

Well, today I’m sharing one of the easiest, “fanciest” desserts I keep up my sleeve: Diet Delight.


When I serve this to guests and they ask me about it, I’m almost embarrassed to tell them how I make it. You take a box of sugar-free chocolate Jello pudding (trust me on the sugar-free thing–I’d be dubious too), Lite Cool Whip (again, stay with me here), and mini chocolate chips.

Mix the pudding according to the directions on the box (for the big box, that’s 3 cups of milk). Then immediately add a whopping dollop of Cool Whip and whisk it in. Pour the pudding/mousse (mousse makes it sound fancier than it is) into individual serving cups and top with a tiny Cool Whip dollop and mini chocolate chips for garnish.


I understand if you have dubious expectations, but just trust me on this. You can’t mess it up. Put the cups in the fridge and let the pudding set. And aside from the delicious factor, one serving of Diet Delight is about 3 WeightWatchers points. So, winning.

Do me a favor and make this for dessert sometime this week. Just trust me. Trust me.

      I don’t have that recipe online, but I’ll post about it this weekend! It’s a family favorite around here.

    I don’t like the taste of fake sugars. Is that taste noticeable in this?

      I don’t think so, but I also prefer diet coke to regular. So. Take that with a huge dose of artificial sweetener. I’m sure this would be equally delicious with the sugar-included versions, just not as calorie-friendly!
